Week 8- 2015

Mini Share: Carrots, Beets, Red Leaf Lettuce, Cabbage, Cucumbers, Zucchini, Summer Squash, Tomatoes(not sure how the configuration will go but we have big red tomatoes and cherry tomatoes).

Full Share: Carrots, Beets, Red Leaf Lettuce, another Lettuce TBD, Cabbage, Cucumbers, Zucchini, Summer Squash, Fennel, Tomatoes, Swiss Chard or Kale.

Very important: when you get your carrots home cut the tops off to store them or you will end up with rubber carrots.

Carrot Top Pesto

1 bunch of carrot tops, washed well and patted dry

2 tablespoons olive oil

juice of one lemon

2 cloves of garlic

pinch of sea salt

2 tablespoons grated parmesan cheese

2 tablespoons of your choice of nuts

Add to a food processor and blend until smooth. Most carrot tops are not super soft, in which case you’ll want to blend until it’s a very smooth paste. Spread on crackers or bread, use as a pizza sauce or in a salad.
